Ginger Carrot Soup

Ingredients:

1 T olive oil2 cups chopped yellow onions1 lb carrots
cut in chunks2 cups low fat chicken broth2 GT crystallized ginger
minced1 tsp cinnamon1-1/2 cups orange juice1/2 fat free half and halfchives to garnish

Preparation:

In a large pot, saute onions in olive oil until soft. Add carrots, broth, ginger and cinnamon. Simmer until carrots are thoroughly cooked, 30-40 minutes. Transfer to a blender or food processor and process until smooth. Stir in juice and half and haf. This may be served warm or chilled garnished with snippets of chives.
